Jam made from green walnuts is not widespread among the varieties of blanks in our kitchen. However, many experienced housewives know that such a delicacy has not only a refined oriental taste and aroma, but also is a storehouse of vitamins and nutrients, which is especially valuable for health in the cold season.
Jam from nuts contains a large amount of iodine, and the vitamin C indicators in it exceed the well-known "vitamin" lemons and currants. It is these properties that provide nuts with significant advantages over preserving jam from other fruits.
Selection and preparation of ingredients
The first thing that affects the cooked dish is the correctly selected ingredients, and therefore, when collecting nuts, you should pay attention to the degree of ripeness of the fruit. Their flesh should look like in the photo.
In addition, you should pay attention to the procedure for preparing products:
- For jam, milk nuts are collected, in which the shell has not yet begun to form (in the regions of the middle zone, the collection of such fruits can be carried out until mid-June);
- Before direct preparation, peeled nuts should be pre-soaked in cold water for 3–7 days (during which water is changed 3-4 times daily).
Important! It is necessary to clean the nuts from the peel with gloves, since the iodine contained in them strongly colors the hands and does not wash off well.
Jam recipe

Energy value per 100 g:
- Green nuts are soaked in cold water for 3 days. During this time, water changes daily from 4 to 5 times.
- Next, a lime solution is prepared - for each liter of water, 2 tbsp will be required. tablespoons of lime. After complete dissolution, the lime water is left to settle for 8 hours, then filtered through cheesecloth and nuts are poured with it. In this position, the fruits remain for 12 hours (with periodic stirring).
- After that, the nuts are washed under running water (until the water is completely clean). Then the fruits are again soaked in cold water for 1 hour.
- Water is poured into the volumetric container (4 l), 1 tbsp. Are diluted in it. a spoonful of alum and put on fire. Nuts are carefully thrown into boiling water and boiled for 20 minutes. This procedure is needed to neutralize lime.
- Hot water is drained, and the fruits are thoroughly washed under running water.
- After that, each nut is pierced several times (from all sides) with a thick toothpick and poured with cold water for 1 hour.
- To prepare the syrup, sugar is poured with water and brought to a boil, after which the resulting foam is removed.
- Nuts are dropped into the syrup, which must be boiled for about 15–20 minutes, after which they are removed from the heat and insisted for 12 hours. Then the procedure is repeated 4 times (the syrup with fruits is boiled for 15 minutes, then it is infused for 6 hours).
- When cooking for the fourth time, after 10 minutes of boiling, spices are added (1 teaspoon of citric acid is mixed in a glass of lemon juice and added to syrup, cloves, cinnamon and cardamom can also be used to taste). Next, the nuts are boiled for another 10 minutes.
- After welding, during cooling, all spices are taken out of the still warm syrup.
- Jam is laid out in pre-sterilized jars.
Storage Features
Walnut jam is quite well preserved both in closed jars and in open containers. However, in order to extend its shelf life, it is necessary to adhere not only to the temperature regime, but also to other conditions of detention.
When buying ready-made jam, you need to pay attention to its color - it should be uniform and not have light impurities.
There are several basic ways to store jam:
- in the open form, the delicacy can retain its taste and useful properties in the refrigerator (at a temperature not exceeding + 5 ° C), the duration of storage can vary from 1.5 to 2 months;
- in clogged banks, the shelf life is extended to 9 months (temperature should not be higher than + 22 ° C).

In this case, in the second case, it is also important to protect the banks from direct sunlight. The best option would be a darkened room (for example, a pantry).
It is not recommended to store such twists in the cellar, since low temperatures in the winter can cause the cans to explode due to freezing or a sharp temperature drop (in case the temperature drops below 0 ...- 1 ° С).
Walnut jam is not only an exquisite sweetness. Its use in medicine as a therapeutic and useful supplement is a fairly frequent phenomenon. Cooking does not belong to simple recipes, and therefore it is not so simple to make it.
